A native of New York, John began his career with ten years in the production side of the food industry.
After moving to the Lehigh Valley in 1992, he opened the former Trapper’s Pub on Allentown’s South Side. He was soon inspired to open a “casual, yet upscale” restaurant in the area and set his sights on Allentown’s West End where he soon opened
Thanks to his never-ending ambition, Grille 3501 remains at the top of the award-winning list of restaurants
in the Lehigh Valley.
J.P.’s resume boasts 25+ years of outstanding culinary experience
in the Lehigh Valley.
Among the awards he earned while serving as executive chef at the Campagna, Glasbern and former Ballietsville Inns are the “Top Country Inn” designation presented by the James Beard Foundation, Mobil’s Four Star Award, the Best of the Best Five-Star Diamond Award and the DIRoNa Award.
Chef Bradley’s culinary career began early on inspired by multi-Michelin starred chef, Gordon Ramsay. After graduating from Northampton Community College’s Culinary Arts program in 2015, Shive sought to further develop his own creativity as Sauté Chef at Grille 3501, and later as Sous Chef at 1774 Grille & Tap.
In 2018, Shive returned to Grille 3501 where he would ultimately achieve the Executive Chef position.
Outside of the restaurant, Bradley loves dining out, especially at mom and pop restaurants, but also enjoys hanging home, trying out new cooking techniques, and reading.
His favorite book genre?
Recipe books, of course.
Cindy brings 25+ years of customer service experience to our management team. She's especially proud to have been a part of the original 3501 team when we first opened our doors in 2001.
After enjoying ten years dedicated to raising her two sons, Alec & Jake, Cindy returned to the team in 2018 as the Restaurant Manager.
Alex is a true hybrid between the restaurant and education industries. He earned a bachelor’s degree in Health and PE/Adapted PE from West Chester University, and a master’s degree in Special Education from Lehigh University, all while also working in various restaurants for 13 years. His dream is to one day open his own little “spot”, providing employment and opportunities for individuals with special needs. As the Beverage Operator at Grille 3501, Alex is always focused on delivering the next creative cocktail or finding the perfect,
Mandi joined the Grille 3501 family in 2006 while earning a business management degree at Kutztown University and a masters in educational leadership from Lehigh University. After exploring other professional career paths she decided Grille 3501 was the most fulfilling and seamlessly transitioned into the role of Events Manager at Grille 3501 and at our sister restaurant, ZEST. Known for her pleasant attitude and hard work ethic, Mandi takes pride in, and thoroughly enjoys, delivering an unforgettable experience for all of our guests.
